Welcome to my barebones basic recipes page! I do a lot of baking, and some cooking too, so I thought it'd be fun to have a place for that kinda thing! Just one big page for now, but I might break it up into sections at some point in the future. Let's call this a proof-of-concept. I also like to write recipes down as efficiently as I can, so I hope they still make sense! Might add images in the future if I can figure out how to make it look nice.
I make this for literally every family gathering and for about 3 birthdays per year. Goes great with raspberry sauce (raspberries, equal amount of white sugar, a little lemon juice, heated and mushed until it looks like sauce) and whipped cream!
Preheat oven to 375F, grease 8 inch round cake pan and line with parchment. Melt chocolate and butter together. Mix chocolate-butter with sugar and vanilla. Add eggs, beat until smooth. Add cocoa, combine. Pour into pan, bake for around 25 minutes. Let cool in pan and invert onto a plate, then flip again, right-side-up. For style points, dust with powdered sugar.
My sister's favorite. You can use a whole egg and double the rest of the ingredients and it works fine! My dad likes a version with 1/3 cup of additional sugar and regular cocoa instead of dutch.
Cream together butter, sugar, and vanilla. Add egg and beat for around 1 minute. Add baking soda, flour, and cocoa and combine. Mix in chips and marshmallows. Ideally, rest dough in fridge overnight. Preheat oven to 350F, place cookies on parchment-lined sheet, add extra marshmallows on top. Bake 15 minutes. I like them cooled completely so they're chewier, but follow your heart.
My dad keeps buying lemons and giving me sad eyes until I make this for him. Save me from this hell of my own making. Optional icing: mix lemon juice, powdered sugar, and butter (i start with around a tablespoon) until it feels right, then add to the cooled loaf!
Preheat oven to 350F, grease loaf pan and line with parchment. Mix flour, baking powder, baking soda and set aside. Mix granulated sugar and eggs at medium-high speed until combined. Still mixing, pour in melted butter and oil. Add vanilla, lemon extract, zest, and juice. Mix until combined. Add sour cream/buttermilk and mix again. Add dry ingredients to wet in thirds. Pour into loaf pan. Bake for 1 hour or until a toothpick comes out clean (start checking at 50 minutes). Cool in loaf pan until it's safe to touch, then cool completely on a rack.
A recent addition to my repetoire! I like to save them in a tupperware and toast them for a breakfast snack. I also make them in a tin that was meant for 'all-edge brownies' (so the cups are square) but a regular muffin/cupcake tin should work fine!
Preheat oven to 350F and butter muffin tin. Absolutely obliterate the banana. Mix in sugar, oil, egg, and vanilla until combined. Add flour and baking soda, and mix until combined. Stir in a couple strong handfuls of chocolate chips. Spoon the batter into your muffin tin. If you don't think you used enough chips, just put more on top. Bake for around 15 minutes, but it may take longer if your muffin tin is deeper than mine. Check for batter with a toothpick to make sure. Cool in the tin for a few minutes, then pop out onto a cooling rack.
